WHere is an easy interpretation of a drink found on the seasonal menu. Designed as a large-volume pre-mixed that is bursting with essence associated with Christmas time, which makes it perfect for a holiday party. Reserve the remaining syrup you can use for brunch beverages, desserts, or to make another batch of this cocktail.
The Bikini Cocktail
Yields 10 servings
To make the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Syrup: Put every items into a saucepan, heat until it reaches a light boil, agitating so the sugar melts. After that, remove from the heat and leave to reach room temperature completely. Decant into an sterilised bottle, close it keeping it chilled, it will last for around one month.
For the Batch Mix: Mix all the liquid ingredients in a large bottle, allow it to infuse for 60 minutes, then filter it , ideally through muslin, making it perfectly clear.
For serving: Measure 85ml from the premix into your cocktail shaker containing ice, and stir gently for one minute to cool it down. Filter into a frosted cocktail glass or equivalent, top with some cranberries and complete it using a quick spritz of mandarin oil over the top.
